Post Call Pasta

Some days you just need a wholesome home cooked meal that takes less than minimal effort to achieved. I often find that if I’ve had a particularly busy call with little to no sleep then once I’ve got home and slept for a few hour, I wake up ravenous but with the motivation of a sloth contemplating a triathlon. This is when I make what I’ve taken to calling my “post call pasta”.

This meal meets the requirements of a balanced meal, with the comfort factor, the yum factor, and the “I’m to lazy to even order takeaways” factor.

It makes 3-4 portions
Ingredients:
1 tin Rhodes Mexican Style tomato and onion
1 tin coconut milk/cream
1 tin chickpeas
Your favourite pasta

Additional but not required:
A shake of Mixed herbs
Some frozen/fresh spinach (if you use baby spinach leaves you don’t have to chop anything. 1-2 cups

Method:
2 pots
Pot 1: Empty the 3 tins into it and place on a medium heat. Add herbs, stir. Add spinach, stir

Pot 2: Make pasta according to package instructions

Drain Pasta and serve into a bowel.
Spoon however much spicy chickpea sauce onto the pasta

Curl up on couch while cradling your bowel of yumminess

Default post call position: blanket, bed/couch, food, cat somewhere
The whole recipe falls apart without a tin opener
I had some baby spinach that I’d chucked in the freezer that were added post this photo
Creamy, pasta-y, tomato-y with spice already added so you don’t have to try get the flavours right yourself
